<p><em>Jeg tror ikke nødvendigvis at vegetarisme behøver være løsningen på de energi- og ressursproblemene verden står ovenfor. Allikevel mener jeg at så lenge verdens kjøttproduksjon foregår som nå, med høyere energi-input enn -output og hvor dyrefôr hovedsakelig består av korn, mais og soya,  er det god skikk å kutte ned på eget kjøttforbruk. Så kan man heller velge å kjøpe gode økologiske og biodynamiske kjøttprodukter av høy kvalitet når man først skal kjøpe kjøtt! Her i huset prøver vi nå å ha tre vegetariske dager i uka. Denne gang ble det falafler, servert med med ovnsbakt hokkaido gresskar, sopp- og ostesaus samt en grønn salat!</em></p>

<p>&nbsp;</p>
<p>Legg kikertene i kaldt vann i kjøleskap 1-2 døgn. Skyll de godt i kaldt vann.</p>
<p>Miks vårløk og hvitløk fint i en blender eller hurtigmikser. Tilsett resten av ingrediensene og miks til det blir en slags deig.</p>
<p>Smak til deigen med salt og pepper samt litt soyasaus. La deigen stå kaldt i kjøleskap et par timer, før du former den til små flate boller.</p>
<p>Stek faleflene på middels varme i godt med smør. Lager du de i god tid, kan de varmes i ovnen på 180 grader i 10-15 minutter før servering.</p>

<p>&nbsp;</p>
<p>Kok kålbladene møre i lettsaltet vann og avkjøl hurtig i isvann. Skjær bort den tykke stilken ca halvveis opp på kålbladet.</p>
<p>Kutt gulrøtter og pastinakk <em>julienne</em>, altså i tynne staver. Det er selvfølgelig et pluss om de ser pene ut, men hovetpoenget med dette er at grønnsaksblandingen skal kunne &#8220;stables&#8221; så stabilt som mulig.</p>
<p>Finhakk løk og hvitløk, og riv østershattene i tynne strimler. Koriander og karve knuses i en morter.</p>
<p>Varm en jernpanne og tilsett smør. Stek soppen på middels sterk varme med litt pepper for å fremheve den gode smaken. Tilsett olje, kryddere og grønnsaker. La surre til alt er mørt, tilsett eventuelt mere fett ved behov. Smak til med soyasaus, koriander og karve. Avkjøl blandingen.</p>
<p>Legg et kålblad flatt. Legg ca 1/8 av grønnsaksblandingen på kålen og brett inn sidene som på en burrito. Brett tilslutt rullen over den siste enden så skjøten kommer på undersiden. Gjenta prosessen til du har 8 kålrullader!</p>
<p>Tilbered resten av måltidet og sett kålrulladene i ovnen på 170 grader de siste 10-15 minutter før servering. Vel bekomme!</p>
